In the homeland of Paul Cézanne, at the end of a charming country lane that winds down to the foot of the Montagne Sainte-Victoire, Mathias Dadine has stepped into the kitchen of a brand new luxury hotel complex, the Lodges Sainte-Victoire. Using a range of seasonal products, this chef – a native of the Var department – manages to recreate the myriad of flavours inspired by the surrounding landscape: soft-boiled eggs, Aigo boulido Provençal soup, ham broth, seasonal truffles, porchetta of rabbit stuffed with prawns, vanilla croustifeuille pastry, mirabelle plum compote and plum sorbet. Majestic yet with an air of faux-simplicity, his food evokes the sensual joys of a stroll through the Provençal countryside and almost immediately earned him a Michelin star.
