Every gourmet knows his name: Jean-Luc Rabanel is one of the stars of French gastronomy and a major personality, who has been tending to his kitchen garden for over 30 years. A master of vegetables, spokesman for organic produce and pioneer of the "locavore" local food trend, this chef transcends the flavours of the South with brio with his Jerusalem artichokes with smoked tea, chestnut gnocchi, turbot with saltwort, or braised chicory with bone marrow. Test tubes, straws, verrines and mini dishes provide a tea-party approach to every meal, with seven or thirteen successive "touches of taste" according to the chosen menu, adding an experimental touch to this "workshop". You leave here with the impression you've explored uncharted territory in the land of flavours. Delicious.
