A true landmark on the Aix gastronomic map, Jean-Marc Banzo's Clos de la Violette has been placed in the hands of Marc de Passorio. The Michelin-starred former chef of the Hostellerie du Vallon de Valrugues has the required stature to take over the reins and impose his own style. Under him, the 18thth century boudoir has gained modernist hints in red and black, similar to the current décor at his other restaurant, the Esprit Culinaire in Châteaurenard. His haute cuisine uses aromas from herbs found in the local countryside: The chef makes extensive use of Provence's bounty, with vegetables from the Salon plain and golden trout from the Alps. The locals are relieved that this gourmet jewel, hidden from the town-centre crowds, is in good hands. The painstaking and flavoursome cuisine has been rewarded by a first star.
