In 1930, the assessor Martelly had a wish to celebrate each year the end of the terrible plague with a blessing and distribution of what will become the famous callison of Aix.

Nowadays, a procession joins the Saint Jean de Malte church where is given this blessing then the distribution takes place at the place des 4 dauphins.

For centuries, this tradition was passed on the first Sunday of September.
